About the Recipe

Pizza night is a big deal in my house! Whether its margherita, classic pepperoni, smoked salmon and micro greens or a smores dessert pizza; it's always a time to celebrate. I love playing around with and developing different pizza dough recipes but the one I am sharing here is a personal favorite of mine for its versatility. My same day pizza dough is perfect for the times you wake up and think pizza sounds good for tonight or if you are having guests over for dinner and want to serve something that can be enjoyed with a movie or outside on a beautiful summer night. What I like most about this dough, is that the combination of both 00 and bread flour gives you a crust with a crisp outside and chewy inside. It can be left thick and loaded with cheese and pepperoni or stretched thin for a classic Margherita style pizza. No matter how you top it or how you bake it, with this dough the pizza possibilities are truly endless!

Ingredients

  • 230 grams 00 flour

  • 260 grams bread flour

  • 1/2 teaspoon instant yeast

  • 1 teaspoon sugar

  • 2 1/2 teaspoons fine sea salt

  • 350 grams warm water (90-100 degrees)

  • flour and semolina for dusting

Preparation

This recipe takes 7-10 hours from start to finish.

Make the dough:

Step 1

In a large bowl, whisk together the flours, yeast, sugar and salt. Add the water and stir until a shaggy dough forms. Cover and let rest for 30 minutes.

Step 2

After your dough has rested, stretch and fold the dough in the bowl several times. This is to incorporate any dry pockets of dough into the center. Cover and let rise for 5-8 hours.

Step 3

After your dough has risen, preheat your oven according to the directions below. Divide your dough into either two 420g portions or three 280g portions. Fold the edges of the dough into the center and roll gently on a clean surface cupping the dough with your hand to form a ball. Repeat with each portion of dough, cover and let rest while your oven heats up.

Step 4

Now its time to make your pizzas! Only form/make one pizza at a time as letting a formed and topped crust sit while another pizza bakes will lead it to become soggy and stick. Form your crust into a 10"-12" circle by either stretching the dough by hand on a well floured surface or if you're feeling brave, you can toss the dough into the air and stretch it using the floured backs of your hands and knuckles. Take care not to press all of the air out of the outer edges of the crust.

Step 5

After you have formed your crust, either place it onto semolina dusted parchment paper (if using a home oven) or a pizza peel dusted with semolina flour (if using a pizza oven). Top as desired and bake immediately!

Bake your pizzas:

If using a home oven

Step 1

Place a baking stone on the lower middle rack of your oven and set the oven to 500 degrees. Allow your oven to preheat for 45-60 minutes.

Step 2

Once your oven is properly heated, form your first crust and top with desired toppings. Only form and top one pizza at a time so your crust doesn't get soggy while another pizza is baking. Leaving your pizza on the parchment paper, slide it onto a pizza peel and launch it onto the baking stone in your oven. Bake the pizza for 10-12 minutes, until cheese is bubbly and crust is crisp.

Step 3

Remove from oven, slice and enjoy!

If using a pizza oven

(If you have a pizza oven, you probably already have your preferred way so feel free to use that but this is how I make them in mine.)

Step 1

Heat up your pizza oven on medium/ high heat until the center of the stone reads 700-750 degrees.

Step 2

Once your oven is properly heated, form your crust, place on a pizza peel that is dusted with semolina and top your pizza with desired toppings. When using a pizza oven, its important to move quickly so your crust doesn't get soggy and stick to the peel. Immediately after topping, turn your oven down to low and launch your pizza into the oven. I turn my oven down to low because my oven is smaller and the edges like to catch fire. This step may not be necessary in a larger oven.

Step 3

After about 60 seconds, turn your pizza 180 degrees. Continue to rotate your pizza every 20-30 seconds until toppings are bubbling, the crust has charred bubbles and it feels crisp on the outside. The entire baking process usually takes 2-4 minutes.

Step 4

Remove from oven, slice and enjoy!
