About the Recipe

Pizza night is a big deal in my house! Whether its margherita, classic pepperoni, smoked salmon and micro greens or a smores dessert pizza; it's always a time to celebrate. I love playing around with and developing different pizza dough recipes but the one I am sharing here is a personal favorite of mine for its versatility. My same day pizza dough is perfect for the times you wake up and think pizza sounds good for tonight or if you are having guests over for dinner and want to serve something that can be enjoyed with a movie or outside on a beautiful summer night. What I like most about this dough, is that the combination of both 00 and bread flour gives you a crust with a crisp outside and chewy inside. It can be left thick and loaded with cheese and pepperoni or stretched thin for a classic Margherita style pizza. No matter how you top it or how you bake it, with this dough the pizza possibilities are truly endless!

Ingredients

  • 230 grams 00 flour

  • 260 grams bread flour

  • 1/2 teaspoon instant yeast

  • 1 teaspoon sugar

  • 2 1/2 teaspoons fine sea salt

  • 340 grams warm water (100-105 degrees)

  • flour for dusting and oil (if using a home oven) or semolina (if using a pizza oven)

Preparation

This recipe takes 7-10 hours from start to finish.


Make the dough:


Step 1

In a large bowl, whisk together the flours, yeast, sugar and salt. Add the water and stir until a shaggy dough forms. Cover and let rest for 30 minutes.


Step 2

After your dough has rested, stretch and fold the dough in the bowl several times. This is to incorporate any dry pockets of dough into the center. Cover and let rise in a warm environment for 5-8 hours.


Step 3

After the initial 5-8 hour rise and about 1 1/2 hours before you want to bake your pizza, remove the dough from the bowl and divide into equal portions. For pizzas with a thicker crust, divide it into two 420g portions. For pizzas with a thinner crust, divide it into three 280g portions. Form the dough into balls, cover and let rest for 30 minutes.


Step 4

Now its time to form your pizzas! To form your crusts, either stretch the dough by hand on a floured surface or if you're feeling brave, you can toss the dough into the air and stretch it using the backs of your hands and knuckles. Take care not to press all of the air out of the outer edges of the crust.


Step 5

After you have formed your crusts, either place onto lightly greased parchment paper (if using a home oven) or a surface heavily dusted with semolina flour (if using a pizza oven). Cover gently with plastic wrap and let rise for 45-60 minutes.


 

Bake your pizzas:


If using a home oven

Step 1

Once you have formed your crusts and are letting them rise for the final time, place a baking stone on the lower middle rack of your oven and set the oven to 500 degrees. This will allow plenty of time for the pizza stone to heat up before you bake your pizzas.


Step 2

Once your crust has risen and your oven is properly heated, top your pizza with desired toppings. Only top your pizzas one at a time so your crust doesn't get soggy while another pizza is baking. Leaving your pizza on the parchment paper, slide it onto a pizza peel and launch it into your oven. Bake the pizza for 10-14 minutes, depending on how done you like your pizza.


Step 3

Remove from oven, slice and enjoy!


If using a pizza oven

If you have a pizza oven, you probably already have your preferred way so feel free to use that but this is how I make them in mine.

Step 1

With 30 minutes left of the final rise, start your pizza oven and bring it to temp. I have a 12" model so I like to have mine between 650-700 degrees.


Step 2

Once your crust has risen and your oven is properly heated, top your pizza with desired toppings. When using a pizza oven, its important to move quickly so your crust doesn't get soggy and stick to surfaces. Immediately after topping, use a pizza peel dusted with semolina to quickly scoop up your pizza and launch into the oven.


Step 3

After 45- 60 seconds, turn your pizza 180 degrees. You may also want to turn the flame down slightly if you notice spots are charring quicker than desired. Continue to rotate your pizza every 20 seconds until toppings are bubbling, the crust has charred bubbles and feels crisp on the outside. The entire baking process usually takes 2-3 minutes.


Step 4

Remove from oven, slice and enjoy!
